Chocolate Oyster Mushrooms, otherwise known as Italian Oyster mushrooms, are not only a delicious gourmet edible. they are extremely medicinal as well. They can reduce cholesterol, promote cardiovascular, boost the immune system, and are also prevent to be anti-tumour, anti-inflammatory, antiviral, and antibiotic. In a recent study, Oyster mushrooms have shown high concentrations of vitamin D when dried upside down in the sun. They are a superfood indeed!

Cultivation of this mushroom is among the most user friendly of all the mushrooms. It fruits aggressively on grain, straw, wood, coffee, and almost any substrate you might spawn to. Very much affected by light, the chocolate oyster will start to fruit with even the slights exposure. When fruiting from bags it will produce up to 3 flushes and over 2 lbs of fresh mushrooms in total. A first flush can usually be harvested within 1 month of inoculation of grain spawn (using liquid culture). Mycelium should be seen only 3 days after inoculating. It is a very fast colonizer that has shown a high resistance to contaminants.

Chocolate Oysters achieved their name by the noticeably chocolate brown caps which lighten with age. Their stems and gills are beautifully white-chocolate white. They can grow in large clusters or individually, depending on the growing variables. When let to grow, some individual mushroom reach over 6 inches in width, but choice eating are caps between 2 and 5 inches.

Like its Oyster mushroom cousins; Pearl Oyster, Blue Oyster and Pink Oyster, this mushroom is a prize to cook with and to consume. Rated superior in taste by many with a texture like soft abalone. First start cooking by cutting the mushrooms into bite size pieces, and dry saute with a little salt until all excess moisture is cooked out.

Chocolate Oyster Alfredo
- 2 cups chopped and dry sauted Chocolate oyster mushrooms
- 4 chopped and carmellized shallots
- 3 tbsp chopped parsley 1 tbsp lemon juice
- 1 or 2 julienne chicken breasts or tofu pieces
- Light Alfredo sause
- Chopped fresh basil
- Any pasta of your choice
- A small dusting of parmesan cheese
- Garnish with fresh chives
 
Chocolate Oyster Stir Fry - Any amount of each ingredient will work
- 3 cups Chocolate Oyster mushrooms
- 2 tbsp grape seed oil
- 1 Bushel of chopped Fresh Kale
- 1 Red onion
- 1 Red Pepper
- Tofu slices fried in sesame oil
- 2 cloves garlic
- 1 small chopped zucchini
- 2 cups Brown rice or quinoa

Season or spice with your favourites and enjoy an amazing meal that is both delicious and nutritious.
